Maybe you could fraction the time it cooks in the water bath. Raise the temp up a couple points and decrease the cooking time. Someone above mentioned just marinating it

Also, generally, garlic isn't boiled because, well, it winds up tasting like boiled garlic, which isn't very good. I'm not looking for a strong flavor.
